Guacamole Deviled Egg Salad BLTs

Ingredients:
12 slices good-quality, smoky, center-cut bacon
Tabasco sauce
1/2 red onion, finely chopped
1 jalapeño pepper, seeded and finely chopped
1 red jalapeño pepper or Fresno pepper, seeded and finely chopped
1 large clove garlic, grated or finely chopped
Salt
Juice of 1 1/2 limes
2 large ripe Hass avocados, pitted and scooped from skins
A small handful of cilantro, chopped
12 eggs
Cayenne pepper hot sauce (2-3 teaspoons), such as Frank’s Red Hot
Romaine hearts
Vine tomatoes, sliced
4 baguettes (8-10 inches each), split or tortilla chips, for dipping

Preparation:
Pre-heat the oven to 375°F.
Bake the bacon on a slotted broiler pan to crisp.
Place the chopped onion, chili peppers and garlic in a bowl. Salt liberally, then douse with lime juice; let stand for 10 minutes. Add the avocados and cilantro and mash with a potato masher to fairly smooth.
Place the eggs in a pot with a lid; cover with cold water and bring the water and eggs, uncovered, to a rolling boil. Set the timer for 10 minutes. Cover the pot and remove from the heat. After 10 minutes, cool the eggs by running under cold water or placing in an ice water bath. Crack the shells and let stand for a few minutes in cold water to loosen. Peel and chop the whites and yolks and dress with hot sauce, salt and pepper. Add the eggs to the guacamole and combine to make the salad.
To build the sandwiches, place three slices of bacon on a baguette then top with the lettuce, sliced tomatoes and lots of egg salad; set the baguette top in place. Or, serve the egg salad mounded in a shallow serving bowl and top with chopped tomatoes and chopped bacon. Serve with Romaine hearts and tortilla chips for dipping.

Ingredients:
1 cup fat-free (skim) milk
1 packet regular-flavor instant oatmeal
1/4 cup walnuts
1 pouch (7.6 oz) Yoplait Smoothie strawberry banana
Directions:
1.In blender, place all ingredients. Cover; blend on high speed 1 minute to 1 minute 30 seconds, stopping to scrape sides as necessary, until smooth.
2.Pour into 2 glasses. Serve immediately.

Spinach Blueberry Pomegranate Smoothies

1/3 cup cooked Green Giant frozen spinach, squeezed to drain
Juice of 1 medium lime (2 to 3 tablespoons)
1 pouch (7.6 oz) Yoplait Smoothie blueberry pomegranate
Directions:
1 In blender, place all ingredients. Cover; blend on high speed 1 minute to 1 minute 30 seconds, stopping to scrape sides as necessary, until smooth.

French Toast Martini

Ingredients:
2 cups ice cubes
1 shot Irish cream liqueur
1 shot butterscotch schnapps
1 shot cinnamon schnapps
1 teaspoon brown sugar
Directions:
1.Add ice cubes to martini shaker. Add Irish cream liqueur, butterscotch schnapps and cinnamon schnapps. Shake well.
2.Wet rim of martini glass with water, and dip in brown sugar until edge of glass is coated. Strain martini into glass.

Orange Papaya Cooler

Ingredients:
2 cups plain or vanilla fat-free yogurt
1 can (6 ounces) frozen orange juice concentrate
1 papaya, peeled, seeded and sliced, or 1 peach, peeled, pitted and sliced
1 teaspoon vanilla
30 small or 10 large ice cubes (about 1 cup small)
1/4 cup sugar, if desired
Directions:
1.Place all ingredients in blender. Cover and blend on high speed about 30 seconds or until smooth. Serve immediately.

Fiber One Strawberry Smoothies

Ingredients:
1 container (6 oz) Yoplait Original 99% Fat Free strawberry yogurt
1 cup fresh strawberry halves or frozen unsweetened whole strawberries
3/4 cup fat-free (skim) milk
2 tablespoons Fiber One original bran cereal
Directions:
1.In blender, place all ingredients. Cover; blend on high speed 10 seconds.
2.Scrape down sides of blender. Cover; blend about 20 seconds longer or until smooth.
3.Pour into 2 glasses. Serve immediately.

Pumpkin Spice Latte at Home

Ingredients:
Lattes
2 cups milk
2 tablespoons canned pumpkin (not pumpkin pie mix)
1 to 2 tablespoons sugar (to taste)
1/2 teaspoon pumpkin pie spice
1 tablespoon vanilla
1/2 cup hot brewed coffee
Garnish, if desired
Whipped cream
Dash pumpkin pie spice
2 cinnamon sticks
Directions:
1 In 2-quart saucepan, heat milk, pumpkin and sugar over medium heat until hot (do not boil). Remove from heat. Stir in 1/2 teaspoon pumpkin pie spice, the vanilla and coffee.
2 Pour into 2 large mugs. Garnish each with whipped cream, dash pumpkin pie spice and a cinnamon stick.

Strawberry Smoothie

Ingredients:
1 container (6 oz) Yoplait Original 99% Fat Free strawberry, strawberry kiwi or strawberry mango yogurt
1/2 cup sliced fresh or frozen strawberries
1/2 cup orange or
pineapple juice Pineapple chunks, strawberries or kiwifruit slices, if desired
Directions:
1 In blender, place yogurt, strawberries and juice. Cover; blend on medium speed about 2 minutes or until smooth.
2 Pour into serving glass. Garnish with pineapple. Serve immediately.

Fruits layered with yoghurt and muesli

Ingredients:
2 ripe custard apples
1 punnet strawberries
2/3 cup passionfruit pulp
2 cups vanilla yoghurt
1 cup toasted muesli
Directions:
Step 1:Halve the custard apples. Remove flesh and discard seeds. Hull strawberries and slice.
Step 2:Layer one-third of the custard apple and strawberry evenly into glasses. Drizzle each with 1 tbs of passionfruit, then 1 tbs of muesli. Spoon 1/4 cup of yoghurt over muesli. Repeat layers
Step 3:Top yoghurt with remaining fruit and sprinkle with remaining muesli.
