Yellow Finnish Potato with Creme Fraiche

1 medium to large Yellow Finnish Potato
3 tablespoons crème fraiche
1 ounce Osetra caviar
Black Pepper
Gold foil

Instructions for Yellow Finnish Potato with Creme Fraiche Recipe
Wash the potato and prick with a fork a few times. Wrap in gold foil.
Place in a 400 degrees F oven for 40 minutes or until done.
Remove from the oven and cut open with a knife.
Place the crème fraiche in the center and season with salt and pepper.
Top with caviar.

Artichoke Salsa

1 (6.5 ounce) jar marinated artichoke heart,drained and chopped
3 roma (plum) tomatoes,chopped
2 tablespoons chopped red onion
1/4 cup chopped black olives
1 tablespoon chopped garlic
2 tablespoons chopped fresh basil
salt and pepper to taste

In a medium bowl,mix together the artichoke hearts,tomatoes,onion,olives,garlic,salt,and pepper.Serve chilled,or at room temperature,with tortilla chips.
